SO YOU WANT TO KNOW HOW IT ALL STARTED
Three friends.
One goal: make a gluten free cookie that no one could tell was gluten free.
BUT WHY?
Have you tried a typical gluten free cookie? They taste like they are gluten free. That’s a problem for us – see, we believe that cookies are more than just a tasty treat, we believe they are the best way to share a moment of joy, happiness, and comfort with friends and loved ones.
We’re not celiacs, but our friends are and to us, not being able to share a cookie with a friend is one of the worst things in the world. When we tasted the “cookies” they were eating, well, there was no joy there. They were dry, crumbly, and nearly flavorless. Who wants their friends and family to eat something that tastes marginally better than cardboard? Definitely not us.
SO WE SET OUT TO RECREATE THE COOKIE:
To make something that was both gluten free and tasted great. Something that our celiac friends could not just eat, but enjoy and something our non-celiac friends told us was better than anything else they’ve ever tried.
We started the way our grandma’s grandma started when she made cookies: with real ingredients. No artificial colors, preservatives, flavors or sweeteners. No corn syrup. No shortening. No hydrogenated oils. If we can’t pronounce it, we didn’t use it as an ingredient in our cookies.
THEN THE HARD PART STARTED:
Figuring out how to combine these ingredients into something that tasted great. We’d love to tell you we got it on our first try. We didn’t. We tried hundreds of different combinations before we stumbled on a recipe that tasted good and a whole bunch more iterations until we got that recipe perfect.
WHAT WE CAME UP WITH WAS BETTER THAN WE COULD EVER HAVE IMAGINED:
We skipped the traditional flour dough that every other cookie uses and opted for a meringue base instead. This is what allows our cookies to be gluten free and still have their signature light, airy and perfectly chewy texture – like a giant macaroon.
We fold in clean, simple, gourmet ingredients like orange and lemon zest, pure Madagascar Bourbon vanilla, or sustainably farmed cocoa to create our unique, intense flavors.
And then we bake them all up in small batches that are measured, scooped and wrapped by hand in our dedicated gluten free kitchen.
THE RESULT:
A gluten free cookie that no one would ever guess was gluten free. A cookie made to share with friends and family without reservations. A cookie that makes you smile when you taste it.
The best thing about our cookies isn’t the incredible taste, soft and chewy texture, or that amazing smell when they’re baking – it’s the smile on someone’s face the first time they try one of our cookies.
And that’s what cookies are supposed to be about.
