Soft, chewy, spicy, gingery – for a long time this was the only acceptable way to describe the perfect Ginger Molasses cookie. We think there should be a fifth moniker though: vegan.
That’s right, vegan. We keep all the good stuff you expect in a Ginger Molasses cookie. A heavy load of brown sugar, a heaping amount of Molasses, liberal spoonfuls of ginger and cloves, and we roll the cookie in pure cane sugar for that perfect amount of sweetness. But we take out all the bad stuff: gluten, dairy, soy, cholesterol, all those things your doctor told you to avoid. Great taste, a soft chewy cookie, and none of the guilt.
That sounds like a perfect cookie to us.
